no fewer than ten grape varieties to truly showcase the incredible range of soils and terroirs across the vineyard’s 67 plots. A demanding terroir cultivated in harmony with nature to achieve a perfect understanding! Dotted

Caiarossa has an omnipresent energy. It is the energy of nature: of the land, the wind, the soils, which seek no more than to express themselves, free and unimpeded. A positive impetus that offered inspiration right from the outset, in the clear choice to use biodynamics as not just a method but also a philosophy, then in the construction of the vertical winery with natural cooling, not forgetting the ‘feng shui’ precepts that guided the buildings’ orientation. And all of this is expressed in and shines through the character of every single Caiarossa wine.

Created from nothing, drawing on twenty years of work to reveal the complexity of a terroir as expressive as it is capricious, Caiarossa is a young estate that has patiently come into being. Its wine, beautifully tuned and wonderfully precise, expresses the full personality of this truly unique estate. Offering intensity, colour, simplicity, even magic… Caiarossa impresses with its natural strength, its clarity, and its aura, far removed from artificial luxuries. As an active part of our world, we do our best to protect and respect it, while producing great wines. Since our foundation, our biodynamic approach has guaranteed the sustainability and fertility of not just the vineyards of Caiarossa but the natural environment and every living being around us. Biodynamics seeks to support and nurture the entire ecosystem to ensure the maximum possible vitality of the soil, the vines, and the animals and insects that call this place home.

All our vineyard processes follow careful observation of the rhythms of nature, including the lunar cycle and the Biodynamic Calendar, which together help our team to select the perfect time for each activity to produce the very best results. All of these natural supportive relationships work together to ensure the maximum health of all of our plants, provide them with the strongest possible natural self-defence systems, and encourage the fertility and diversity of the whole ecosystem.

Caiarossa’s original name refers to an ancient olivegrowing area: Podere Serra all’Olio.

Following this area’s historical production, we have maintained numerous olive groves from which we obtain our extra virgin oil.

Sometimes we also use this amazing oil to produce gentle natural soaps, and, working with a world-class parfumier, we are creating a brand new ambient perfume which captures not just the delicate scent of our olives but notes of the glorious floral tapestry of the Macchia Mediterranea.

Thanks to its unique microclimate, the Tuscan coast is also the perfect region for extraordinary vegetable production.

The organic Caiarossa vegetable garden is part of our wider vision of creating a natural synergy between all the plants, animals, insects and the community around us.

Our garden was started in a joint project with the children of Riparbella, and it now includes aromatic herbs such as sage, rosemary and basil, as well as onions and garlic, aubergines, zucchini and, of course, many fabulous varieties of Italian tomatoes.

The idea is to offer our guests natural products that have been grown according to our philosophy, so we also use these delicious harvests to make our own pasta sauces and ‘giardiniera’ pickles. Perfect to accompany a Tuscan lunch or ‘aperitivo’. But we have not stopped there.

Caiarossa has boosted local pollination by creating 14 beehives with tens of thousands of happy industrious bees throughout our vineyards and olive groves to increase the fertility and production of all of our vines, plants and flowers.
